21 Day Fix Chicken Black Bean Fajitas

These were delicious!  They were kid tested and husband approved. A healthy way to enjoy chicken fajitas. If you do not like beans, just omit them from the recipe.  Enjoy!  

Ingredients
4 medium sized chicken breasts, fat trimmed off and cut into chunks
1 medium onion, sliced
1 bell pepper (color does not matter), sliced
1 black bean can 15 oz, drained and rinsed
1 tablespoon olive oil
2 garlic cloves, minced
handful of organic spinach (you lay this on the bottom instead of using a tortilla)
or tortilla in place of spinach
1 Tbsp chilli powder
2 tsp ground cumin
½ tsp garlic power
½ tsp onion powder
½ tsp dried oregano
½ tsp smoked paprika
1 tsp sea salt
1/2 blue container of shredded cheddar cheese to top tortilla (optional)
1/2 cup water to cook seasonings into meat and beans

Instructions
  1. Cook chicken in a tablespoon of water in skillet until no longer pink
  2. Turn off stove and cut chicken into strips
  3. Place chicken back in skillet
  4. Add black beans to skillet with chicken
  5. Slice onion and peppers
  6. Place onion and peppers in skillet
  7. Combine all seasonings in a bowl and stir
  8. Add seasonings and 1/2 cup water to skillet stir all together and simmer on low for 10 min.
  9. Place spinach on the bottom of the plate to use as you would your tortilla or use a whole wheat tortilla
  10. Add one red container of meat mixture to spinach or tortilla
Container Equivalents:  1 Serving = 1 Red container, 1/2 Blue Container, ½ Yellow Container
