About Me...

I am a wife and mother of three kiddos, ages 23, 19, and 12. My husband is the love of my life, and we have been married for 26 years. We love the Lord and purpose to put Him at the center of our home and lives. We are a very active family who loves camping, vacationing, playing with our horses, and our Mustangs. We are very active in our church and enjoy serving with our church family. Health and fitness have been a part of our lives for many years. All three of our kiddos were born via c-section, so needless to say, my stomach has not been the same since my muscles were cut through...UNTIL I began doing my Beachbody workouts. I have been using their products for years, and my results have been amazing. I cannot say enough about the results that can be achieved if you are consistent with the workouts every day.

"What is easy to do is also easy not to do." To do or not to do is the question? Every day I make the choice to press play and complete my workout. I feel full of energy and a sense of accomplishment when my workout is done for the day. I am excited to be on this journey of fitness and hope to bring you along with me. My Transformation:

I have always had an interest in my fitness, and have been going to the gym for many years either to walk or to take a class. The gym that we were members at was about 35 minutes from home so we would only go 1-2 times per week. I knew I should be working out more consistently than that so I began using Beachbody products to have daily workouts. There were so many to choose from and something was always coming out that I enjoyed...10 Minute Trainer, Hip Hop Abs, Brazil Butt Lift, Body Beast, T25, to 21 Day Fix. Each program proved to be challenging for me and allowed me to see results. The key to getting results was ME! I knew that I had to be consistent every day. I was tired of having a muffin top from my three c-sections. My daughter used to ask me why my stomach looked "that way"... the roll at the top of my scar. "Silly girl, it is because of you!" Well, enough was enough, I decided that I was going to work hard to get rid of my tummy. My results are below so you can see that our programs work if you work them...

I don’t always associate the word “healthy” with the kind of Mexican food that I tend to gravitate toward — chips, guacamole, and queso, anyone? But these Mexican Chicken Zucchini Boats are the real (healthy) deal: rich flavors, a spicy kick, and 9 grams of fat per serving.

These boats are a healthier spin on chicken burritos, swapping in nutritious zucchini for flour tortillas. A typical flour tortilla contains 25 grams of carbohydrates, 458 milligrams of sodium, and not much else. One zucchini contains 10 grams of carbs, 26 milligrams of sodium, as well as vitamins A, C, and K, and minerals like calcium, potassium, and magnesium. Using zucchini as the vessel is also convenient way to watch your portions without having to think too hard: 1 boat = 1 serving.

Serves: 8 servings, 1 boat each

Ingredients:
4 large zucchini, cut in half lengthwise
4 tsp. olive oil, divided use
1 medium onion, finely chopped
2 cloves garlic, finely chopped
1 cup tomato sauce, no sugar added
2 Tbsp. tomato paste, no sugar added
1 Tbsp. ground chili powder (or 1½ tsp. chili powder and 1½ tsp. ancho chili powder)
1 tsp. ground cumin
½ tsp. ground paprika
3 cups shredded cooked chicken breast
1⅓ cups corn kernels
1 cup shredded cheddar (or Monterey jack) cheese
2 Tbsp. finely chopped cilantro
1 medium tomato, chopped
2 green onions, thinly sliced

Instructions:

  1. Preheat oven to 400º F.
  2. Using a spoon (or melon baller), scoop pulp out of zucchini to make boats.
  3. Place on a large baking sheet. Brush with 1 tsp. oil. Bake for 15 to 20 minutes, turning once, until tender-crisp.
  4. While zucchini is baking, heat remaining 3 tsp. oil in medium nonstick skillet over medium-high heat.
  5. Add onion; cook, stirring frequently, for 4 to 6 minutes, or until onion is translucent.
  6. Add garlic; cook, stirring frequently, for 1 minute.
  7. Add tomato sauce, tomato paste, chili powder, cumin, and paprika. Bring to a boil, stirring frequently. Reduce heat to medium-low; cook, stirring occasionally, for 10 minutes.
  8. Add chicken and corn; cook, stirring occasionally, for 5 minutes, or until heated through. Remove from heat.
  9. Evenly spoon chicken mixture into zucchini boats. Evenly top with cheese.
  10. Bake for 5 to 8 minutes, or until cheese has melted.
  11. Sprinkle evenly with cilantro, tomato, and green onions; serve immediately.
Container Equivalents:  1 Boat = 1 Green, 1 Red, 1/2 Blue, 1/2 tsp.
